As a New Caledonian who arrived in France at 15, working as an apprentice for Jean-Claude Tellechea in a Michelin-starred restaurant in Bayonne, Kendji Wongsodikromo continued learning his trade in the south-west of France in different family-run restaurants recognised by the Michelin Red Guide. Head chef and owner of La Table de Catusseau in Pomerol since March 2015, he has a contemporary cuisine, and uses fresh, seasonal products drawing out tastes and flavours.
He is also a member of French food lover’s alliance AFAMES (Alliance des Friands Amateurs de Mets Epicuriens et Savoureux), a group of chefs from the Gironde who share the same passion for the cuisine of the south-west of France.
