She’s a petite, soft-spoken woman with light-coloured eyes, he’s a solid fellow from southwestern France, they are the Paris-Lesgourgues couple, from a long family line in the art of transforming geese and ducks into elegant foies gras, subtle rillettes, chichons, gratons and other specialities. Being perseverant, attached to traditional know-how (like cold gutting), humble and kind did the rest: customers snatch up the Paris couple’s produce and preserves on the markets in southwestern France as well as at major chefs’ tables in Paris.
