Originally from La Mothe-Saint-Héray in the south of Vienne, Carré du Poitou is a cheese produced from goat’s milk. Moulded with a ladle, it is square in shape and generally weighs 250 g. It is a white soft cheese with a slightly grey rind on ripening, which should be consumed within approximately 4 weeks.
