The way in which this cow is reared and slaughtered makes for a very high-quality meat. Both Limousine and Blonde d’Aquitaine breeds, the cows graze calmly in the Périgord Vert prairies and only eat grass, forage and cereals. Some liken it to the famous Kobe beef for its qualities in terms of colour, taste, smell and texture and the treatment it gets when the cow has reached maturity (massage and daily distribution of fermented corn with the same properties as beer). Only the animals of the highest quality are sold under the name ‘Boeuf de Coutancie’, a brand guaranteeing a fine grain, juicy appearance, bright red colour and slight marbling.
