The oysters produced in Marennes Oléron Bay make Nouvelle-Aquitaine France’s No. 1 production area. In 1989, this organisation enlisted oyster farmers in the Label Rouge quality initiative, ‘Fine de Claire Verte’. The ‘Huitre Fine de Claire Verte’ initiative identifies the regional production and rearing area which includes 27 Charente-Maritime municipalities. Reared in oyster beds for a period of time and at a certain bed density, allows the oysters to green and develop an outstanding flesh quality, making them particularly distinctive.
