Mottin Charentais is a soft pasteurised whole cow’s milk cheese with a white rind. Cylindrical in shape, it has a diameter of about 8 cm and a height of about 4 to 5 cm. Previously referred to as ‘Crottin Charentais’ it was made in Surgères by the ‘Charentes lait’ company. Today it is almost exclusively manufactured in Saint-Saviol in Vienne by Lescure cheese producers.
