Passerillé de la Corrèze wine is traditional in the region as it has been produced in the municipalities of Meyssac and Beaulieu-sur-Dordogne, south of Brive, for over 180 years. Passerillé wine previously known as ‘Vin de Paille’ or ‘Vin Paillé’ is produced in both white and red varieties a method which consists of drying the grapes on racks in aerated conditions for several weeks. The grapes thus lose their water content and become concentrated with sugars and aromas.
