A Limousin speciality, pâté de pommes de terre is a kind of potato and herb pie covered in a butter (or puff) pastry. Varieties exist depending on where they are made and they can sometimes be livened up with sausage meat or chopped parsley and garlic, like in Haut-Limousin, or with crème fraîche, like they do in eastern Limousin.
