This is actually a foie gras goose, as found in Périgord. Since the use of synthetic materials led to a decline in the goose skin industry after the war, these web-footed birds are now only used for their meat.
The meat is essentially used to make potted meats and preserves. Nowadays, geese are sold fresh, whole, in parts (liver, breast fillet, thigh,
giblets), or even canned. Geese are sold through private direct sales or at carving plants. Nowadays, this meat is mainly eaten roasted as part of end of year celebrations.
