This oval-shaped biscuit is slightly rounded on top. The bottom of the Madeleine is ribbed. It has a golden yellow colour on top and golden brown underneath.
This Madeleine is soft, slightly warm and glistening, with an airy texture.
Saint-Yrieix has owed its renown to these Madeleines for over a century. They have been awarded gold medals at competitions in Bordeaux and Paris. The Paublanc company, established in 1840, created the Saint-Yrieix Madeleine.
