The Tricorne de Marans takes its name from its triangular shape and comes from the north of Charente-Maritime. Usually made from unpasteurised ewe’s milk, it is also produced from goat’s milk and occasionally cow’s milk. This cheese speciality from the city of Marans can be traced back to the 17th century under the name of ‘Trébêche’ or ‘Trois-Cornes’.
