Vache Brulé (burnt cow’s) cheese is only found in the Basque Country. This ancient cheese is traditionally made from surplus cow’s milk and is distinctive as it needs to be stored for a long time. In order to achieve this, the cheese is cooked over a hearth which gives it an orange brown colour and allows it to retain the humidity and flavours of the milk. Contrary to what one may think, Vache Brulé cheese is soft and creamy on tasting.
